These burgers look perfectly normal but pack a surprise – an avocado filling. Enjoy them with your favourite salads. Serves 8
Ingredients
1 kg minced beef
2 Tbsp black pepper
2 tsp salt
1 lemon, zest & juice of 1/2 lemon
2 ripe avocados, peeled and pit removed
1 cup sun-dried tomatoes, well drained
Method
- Preheat BBQ or grill to medium-high. Combine the beef, pepper, 1 tsp salt and lemon zest in a large mixing bowl. Mix well and form into thin patties, all the same size.
- In another mixing bowl, combine the avocados, sun-dried tomatoes, lemon juice and the remaining salt. Mash the avocado and mix the ingredients well until smooth.
- Place the avocado mixture onto half of the patties, and top each with another patty. Pinch the edges of your patties together to seal.
- BBQ or grill for about 6-8 minutes per side.
- Allow the burgers to rest for 10 minutes and then serve with the remaining avocado mixture and a salad.
