Recipe of the Week – Chicken and Sun-dried Tomato Coleslaw

Serves 4

Ingredients

4 cups cooked diced chicken
½ cup drained sliced sun-dried tomatoes
1 apple, cored and diced
4 cups shredded green cabbage
4 cups shredded red cabbage
½ cup slivered almonds
¼ cup extra virgin olive oil
4 Tbsp balsamic vinegar
2 Tbsp dried oregano
Black pepper to taste

Method

Mix all ingredients together and serve.
