Recipe of the Week – Prawn & Pesto Fettuccine

Serves 2

Ingredients

  • 200g peeled prawns, or 18 large prawns
  • 4 zucchini
  • Sea salt and black pepper to taste

Pesto

  • ½ cup macadamia nuts
  • 1 bunch coriander, rinsed well
  • 1 clove garlic
  • ½ cup olive oil or macadamia oil
  • Sea salt and black pepper to taste

Method

  1. Combine the pesto ingredients in a food processor and blend until smooth.
  2. Peel and devein the prawns (if using the large prawns)
  3. Bring a few cms of water in a large saucepan with a steamer basket to the boil. Run a vegetable peeler along the zucchini until you reach the centre, seedy part. Steam the zucchini ‘fettuccine’ for about 3 minutes.  Set aside.
  4. Steam the prawns for 3 minutes until they are just cooked.
  5. Place the ‘fettuccine’ in a mixing bowl with the pesto and toss until well combined.
  6. To serve, divide the ‘fettuccine’ between two plates and top with the prawns.
